Pear, Raspberry and Pistachio Salad with a Creamy Poppyseed Dressing

Ingredients

  • 4 cups chopped romaine
  • 1 cup raspberries
  • 2 thinly sliced pears
  • ½ cup shelled pistachios
  • ½ cup crumbled feta cheese

Creamy Poppyseed Dressing:

  • ⅓ cup mayonnaise
  • ¼ cup milk
  • 3 tablespoons sugar
  • 4 teaspoons apple cider vinegar
  • 2 teaspoons poppy seeds

Instructions

  • In a large bowl add 4 cups chopped romaine, 1 cup raspberries, 2 thinly sliced pears, ½ cup shelled pistachios, and ½ cup crumbled feta cheese. Toss the salad.

Creamy Poppyseed Dressing:

  • Whisk together the ⅓ cup mayonnaise, ¼ cup milk, 3 tablespoons sugar, 4 teaspoons apple cider vinegar, and 2 teaspoons poppy seeds.
  • Add the poppyseed dressing to the salad and carefully toss to coat all the ingredients. Serve immediately.
